Vækst in Copenhagen: the greenhouse in the heart of the Latin Quarter
Copenhagen has long been a destination that offers some of the world's finest culinary experiences. In the last ten years, the Danish capital has gone from being a place with lots of traditional fare to also being a paradise for those seeking modern and innovative dishes.
Young and talented chefs from all over the world are flocking to the bike-friendly city to create new cuisine and serve their creations to food-loving Danes and visitors alike. Picolo booked a table at Vækst, a restaurant that has recently been getting rave reviews. Vækst can be found in the Michelin Guide and was recently included in Condé Nast Traveler's list of the very best restaurants in Copenhagen. We understand why.
Condé Nast Traveler writes: "At night, it feels like you're settled into an indoor-outdoor lightbulb glowing cocoon and the owners say they have tried to create the atmosphere of a Danish summer which never ends. Plate presentation is high-end rustic; shoots and leaves are carefully arranged. The evening three-course tasting menu includes a three-glass wine pairing and standout dishes include salted cod with white currants, green tomatoes and buttermilk and on the vegetarian side, grilled romaine lettuce with unripe blackcurrants, ramson (garlic) and Danish Vesterhavsost cheese."
In short: Vækst in Copenhagen
Address: Sankt Peders Stræde 34 in the Latin Quarter, a few minutes’ walk from Strøget and City Hall Square.

Green and organic
Vækst's owners want the restaurant to give the feeling of an everlasting Danish summer.
Vækst, part of Cofoco
Vækst is a modern restaurant with a focus on Nordic flavours. The restaurant is part of Cofoco, the Copenhagen Food Collective, a group with 16 restaurants and cafés. One of the unique things about Cofoco is that members are one hundred percent self-sufficient in green energy thanks to a solar cell park. Cofoco has also opened its own hotel, which was recently voted the best in Scandinavia. Their concept is to serve good food that doesn't empty your wallet. The restaurants vary in style and offer something for everyone.
Vækst can be found in Copenhagen's colourful Latin quarter, in Sankt Peders Stræde, a street that dates back to the Middle Ages, which us lined a number of cosy cafés and shops, as well as second hand and vintage shops. The restaurant fits perfectly into the area and is located next door to hotel SP34.

Nordic style
Vækst bases its food on fresh, Nordic vegetables and herbs.
Close to nature, indoors
The room is relaxing and green and features typical Danish design elements. There are no white tablecloths, and green plants hang from the ceiling and are placed throughout the restaurant. The furniture is made of wood, and you get the sensation of sitting outside in a garden. The restaurant is centred around a 'greenhouse' that takes you down to the ground floor, here they also have rooms for larger groups. The restaurant is on two levels, and the owners say they want to offer the feeling of Danish summer - all year round.

Fried hake
The menu at Vækst changes often and according to which ingredients are in season.
Pure Nordic flavours at a very good price
We reserved a table and ordered the three-course lunch menu, which consisted of a vegetarian dish, a seafood dish, and a meat dish. Vækst bases its food on fresh, Nordic vegetables and herbs, and also offers a vegetarian menu. There is also a wine package for both the lunch and evening menus.
The menus were beautifully put together, with three courses and two amuse-bouche dishes served by friendly and knowledgeable waiters. The menu is seasonal, and changes accordingly. The three-course menus will set you back DKK 695, including the wine package: quite affordable, in other words. Vækst also has an à la carte menu full of culinary delights.

A sweet end to a beautiful meal
Fresh strawberries, homemade sorbet, with cream and biscuits.
