Here are six bakeries in Copenhagen you must try out, according to head baker Gonzalo:

1. Apotek 57

Address: Fredericiagade 57

"Here, you can get delightful buns, go for the sesame version. The crust is beautifully caramelised, crispy on the outside and soft and airy on the inside – with the most flavoursome and salty butter… To die for," says Gonzalo.

2. Lille Bakery

Address: Refshalevej 213A

"Great lunch with a fantastic atmosphere," says Gonzalo.

And it is precisely its atmosphere and good service that this little bakery is known for, in addition to a wide range of cakes, pastries and sandwiches, made with natural ingredients and without additives.

3. Hart Bageri

Address: Gl. Kongevej 109

Hart Bageri is not Gonzalo's personal recommendation, but it is nonetheless a renowned place that needs mentioning. The bakery was opened by American chef Richard Hart, who was the head baker at Tartine Bakery in San Francisco, California. He has achieved success with his emphasis on traditional methods and natural ingredients. In Copenhagen, it's all about high-quality sourdough bread, cakes and pastries.

4. Seks Bakery & Eatery

Address: Krystalgade 6

"The friendliest people work here; you must visit and have lunch. There's a great variety on offer," says Gonzalo.

The café is known for its trendy and stylish decor and its use of natural and organic ingredients.

5. Juno the Bakery

Address: Århusgade 48

"Tasty and beautiful pastries, with an incredibly high level of baking," says Gonzalo.

The café is trendy, and here, too, they are best known for their sourdough bread. The backstory is that former Noma chef Emil Glaser missed good cinnamon buns in the bakeries of Copenhagen (which was the pastry he grew up with in Sweden). He was therefore determined to have cinnamon buns in the display case at Juno the Bakery when it opened in 2017.

6. RUG Bakery

Modestly enough, Gonzalo did not recommend his own bakery, RUG Bakery at Villa Copenhagen. But it must, of course, be included. The place has become a popular sourdough bakery and café that serves a wide range of breads, pastries and cakes, as well as coffee and tea. The bakery is known for its authentic sourdough baking techniques and use of natural and organic ingredients, as well as its trendy and minimalist decor.

And last but not least, it is located in one of Copenhagen's coolest hotels, Villa Copenhagen.
